Cooky Cookies

I saw this recipe at http://allrecipes.com/Recipe/Cooky-Cookies/Detail.aspx .  I followed the same basic recipe but made some (healthy?) changes.  I used half the recipe, reduced the amount of oil and used whole wheat flour.  The holes in the cookies were made by my daughter.  She thought it was too plain.


This recipe makes about 40 cookies.

Ingredients:
1/4 cup vegetable oil                                               1-3/4 cups wheat flour
1/2 cup butter, softened (I used a little less)             1/2 teaspoon baking soda
1/2 cup white sugar                                                 1/2 teaspoon salt
1/2 cup packed brown sugar                                   1/2 cup cornflakes cereal ground
1 egg                                                                      1/2 cup rolled oats ground
1 teaspoon vanilla extract                                        1 cup chopped walnuts ground
1/2 tsp almond essence     

Directions: 

1. Preheat oven to 375 degrees F (190 degrees C).

2. Beat butter and sugars until fluffy. This is important.  Slowly add oil and beat until oil is well   incorporated. Add egg, vanilla and almond essence and beat to mix.

3. In a bowl, combine flour, soda and salt. Add to butter mixture and stir just until mixed. Combine ground  corn flakes, oatmeal and walnuts and add to cookie mixture; mix just until combined.

4. Make one inch balls, place it on a cookie sheet and flatten it slightly.  Bake at 375 degrees F (190 degrees C) for 12 mins for soft cookies or about 14 mins for crunchy cookies.  They have to be lightly browned. Since these are so rich, you can chill the individual balls of cookie dough and then freeze them in freezer bags. You can then take them directly from the freezer to the oven, just add a few minutes to the cooking time.
