I know that sweet potatoes are good for you. But I don't like the taste. I have tried baking them, roasting them and even making the chips in the oven. My daughter stopped eating them after she turned one. I was reading Mark Bittman's article about the food processor and he had a recipe for patties with shredded yams and other vegetables. Yippee!!! I didn't use the exact recipe- just the idea. These were made primarily for my daughter. So there are no chilies or chili powder in this preparation. This recipe is nice because you can use any vegetable you have on hand and any seasoning/spices etc. And, yes, my family loves it :).
1 large sweet potato
1 medium sized potato (I used russet)
1/2 medium sized onion
1/2 Tbsp of cumin and dhaniya (corriander seeds) powder.
salt to taste
1 Tbsp ground oats.
1.Grate all the vegetables in the food processor (or by hand).
2. Add a little oil to a wide pan, and when the oil is hot, add the cumin and dhaniya powders. Then add the shredded vegetables and saute until cooked partially. Add the oats and cook for a few seconds.
3. Let it cool, make patties and roast them on both sides in a tiny bit of oil on a pan.
This freezes well. So you can make large batches and freeze it. When needed roast it on a pan. It can be eaten as such or used in sandwiches.
I sometimes add mostly-cooked black beans to the shredded vegetables before making the patties. This will make a complete meal- important when one is a vegetarian.
