Thukkuda is what my mom calls these. I don't know any other name for it. It's basically made with whole wheat flour and some spices. Roll them out, cut them into shapes and deep fry them. They disappear faster than I can make them and it is never ever enough :).
Ingrdients:
- 1 cup whole wheat flour
- salt to taste
- hing (Asafoetida)
- red chilli powder
- 1 Tbsp hot oil (or butter)
- Enough water to knead it into a firm dough (like chappati dough)
- Enough oil to deep fry the
Mix all the dry ingredients together. Rub in the oil(or butter) with your fingers. "Rubbing in" is to try to coat all the flour with the fat. Add enough water to make a firm ball of dough.
Let it rest for a few minutes (not too long).
Pinch of smaller balls and roll it out as thinly as possible on parchment paper (I think wax paper will work just as well). I use a bit of flour to make the rolling out easier.
Cut it into diamond shapes with a cutter or a knife and fry it in hot oil until they golden.
It is time consuming but well worth the effort :).
Note: Using the parchment paper makes transferring the bits to the oil much easier. Of course it can be done without the parchment paper as well.
