Walnut Pie without corn syrup!

I've always wanted to bake a pie but have been reluctant to venture into the world of crust making... that is, until I found this amazingly easy and tasty recipe http://allrecipes.com//Recipe/Easy-Pie-Crust/Detail.aspx for the crust.  I love it!  I'm not afraid of baking pies anymore! :).  I used the pecan (in my case walnut) pie recipe from the same site http://allrecipes.com/Recipe/Pecan-Pie-V/Detail.aspx which does not use corn syrup (a big no no now).  I didn't change either recipe too much (some minor tweaks).  But I think I will definitely cut down the fat from the filling next time.  Both my husband and I loved it.  My daughter didn't like it the first day.  She declared it "yummy" when I served it cold from the fridge the next day.

Recipe for the crust:  (The crust takes on the smell of the oil you use.  So I would add some flavouring- for example vanilla or almond)

Ingridients:
1 1/2 cups all purpose flour
1/4 tsp salt
2 Tbsp sugar
1/2 cup oil
2 Tbsp milk
1/2 tsp vanilla essence

Directions: 
  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Place all ingredients in 9 inch pie pan. Stir together with fork. Pat mixture into bottom and up the sides of the pan. Poke holes in bottom and side of crust.
  3. Bake for 12 mins in the preheated oven, or until light brown. Use as directed in favorite pie recipe. 
While the crust is baking you can prepare the filling.


Recipe for the walnut filling:

Ingredients:
1 cup light brown sugar                  1 Tbsp flour
1/4 cup white sugar                        1 Tbsp milk
1/2 cup butter                                1 tsp vanilla extract
2 eggs                                            1 cup chopped walnuts

Directions:
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
  3. Pour into the above 9-in pie shell. 
  4. Bake at 350 deg F for 15 mins and then reduce temperature to 300 degrees and bake for 55 - 60 mins, or until center is done.
